We all know when life gives you lemons, you make lemonade. But when the FRESH PRODUCE BOX gives you apples, you can make a deliciously healthy treat! Like this week’s recipe pairing, a unique Mixed Grain Pilaf with Caramelized Apples. Yum!
Mixed Grain Pilaf with Caramelized Apples
2 tsp vegetable oil
1 small onion chopped
½ Cup brown or white rice
¼ Cup lentils – your choice (or I used ¾ cup of premixed rice and lentils)
1 ½ Cups chicken or vegetable broth
1 large apple quartered, cored and sliced
2 Tbsp sliced almonds toasted
¼ dried apricots chopped
3 Tbsp chopped fresh parsley
Salt and pepper to taste.
Heat 1 tsp of oil in a medium saucepan over medium heat. Add the onion and cook, stirring until lightly browned. Stir in the rice and lentils and cook stirring until the grains are lightly toasted, about 2 minutes. Add the broth and bring to a boil.
Reduce heat, cover and simmer until broth is absorbed and grains are tender.
Meanwhile, heat remaining 1 tsp of oil in a medium non-stick pan over medium heat. Add the apple and cook, stirring occasionally until it is tender and lightly browned, about 8 minutes.
Stir the apple, toasted almonds, parsley, salt and pepper into the rice mixture, cover and let stand before serving.
