What to do when your FRESH PRODUCE BOX includes a whole head of fresh broccoli? Fill your stir-fry cravings with a delicious Sticky Tofu and Broccoli Stir-Fry. A perfect and healthy vegetarian dish that everyone is sure to love!
Sticky Tofu and Broccoli Stir-Fry
¼ Cup Hoisin sauce
1 tbsp. Soy sauce
1 tbsp. Asian Chili Sauce (either hot or sweet)
1 tbsp. Rice Vinegar or Cider Vinegar
1 tbsp. grated fresh ginger or 1 tsp ground ginger
1 package extra firm tofu, drained and chopped into 1 inch pieces
2 tsp cornstarch
3 tbsp. vegetable oil
½ lb fresh asparagus washed and chopped into 1 inch pieces
1 head broccoli cut into florets (about 4 cups)
3 cloves garlic, minced
1 yellow or red sweet pepper chopped
1 red onion thinly sliced
In a bowl, stir together the hoisin sauce, soy sauce, chili sauce, vinegar and ginger. Set aside.
In a small bowl, using a fine mesh sieve, dust the chopped tofu with the cornstarch, turning to coat.
In a large non-stick skillet or wok, heat 2 tbsp of the oil over high heat; stir-fry the tofu, turning often until golden, 4 to 6 minutes. Transfer to a bowl and toss with half of the hoisin mixture. Set aside.
Add the remaining 1 tbsp of oil to the pan and stir fry the asparagus and broccoli for 2 minutes. Add the garlic, yellow or red pepper and the red onion. Continue stir-frying for 2 minutes. Add the remaining hoisin mixture and stir-fry until the broccoli is tender crisp. Stir in the tofu and serve over rice.
If you like a saucier stir-fry, you can double the Hoisin sauce, soy sauce, chili sauce and vinegar. Enjoy!
