This week’s FRESH PRODUCE
BOX was jam-packed with superfoods like spinach and avocado. Our recipe is a
simple and super healthy Spinach and Strawberry Salad with Candied Pecans.

SPINACH & STRAWBERRY
SALAD
WITH CANDIED PECANS
Ingredients for the Salad;
6 C Baby Spinach leaves or
mixed lettuces
½ Thinly sliced red onion
1 C sliced fresh strawberries
(or more to taste)
1 Ripe Avocado chopped
½ C Feta Cheese
¼ C Balsamic Dressing or
to taste
Ingredients for the
Candied Pecans;
1 C Pecan pieces and
halves
2 Tbs Butter
¼ C Maple Syrup
2 Tbs Brown Sugar
Directions;
Toss all the salad
ingredients together in a large bowl except the dressing.
Make the Candied Pecans by
melting the butter in a small frying pan.
Add the pecans and coat
with butter and cook for 2 minutes careful not to burn.
Add the Maple Syrup stir
to mix and then add the Brown Sugar, stir to mix.
Cook until the sauce is
bubbly and has thickened, careful not to burn the nuts, for about 4 minutes.
Pour the nuts onto a piece
of parchment paper to let them harden – takes about 10 minutes
Add the nuts to the salad,
pour on the dressing, and serve immediately.
