FRESH PRODUCE BOX RECIPE: EASY CHEESY WHITE VEGETARIAN LASAGNA

...And we’re back! This week’s FRESH PRODUCE BOX included carrots, colourful peppers and a ton of greens so we have a recipe for an Easy Cheesy White Veggie Lasagna. My mouth is watering already...

EASY CHEESY WHITE VEGETARIAN LASAGNA





Preheat oven to 350

INGREDIENTS;

For the Filling:

1 Chopped onion

2 Cloves garlic minced

1 C Chopped carrots

1 Chopped red or green or orange or yellow pepper

1 Package chopped spinach, thawed and water squeezed out

1 Large tub Ricotta cheese

1 Tbs butter

4 Eggs

9 Lasagna sheets cooked as per directions on box

2 C Shredded Mozzarella cheese

Salt and pepper to taste

For the Sauce;

¼ C Butter

¼ C Flour

2 C Milk

¼ C Shredded Parmesan cheese

¼ C Shredded Parmesan cheese for the topping.

Salt and pepper to taste

DIRECTIONS;

Grease a 9 x 14 casserole dish. Prepare the Lasagna noodles as per the directions on the box and lay 3 noodles for the first layer.

Sauté the onion, carrot, red pepper and garlic in 1 tbs of butter until they are soft.

In a large bowl, mix the 4 eggs into the Ricotta cheese and add the prepared spinach. Add the sautéed vegetables when they are ready and mix thoroughly.

Pour half of the vegetable mixture over the prepared noodles. Spread with 1 Cup of shredded Mozzarella cheese.

Top with three lasagna noodles then pour the remaining vegetable mixture over and top with remaining 1 Cup of shredded Mozzarella cheese.

Top with three remaining lasagna noodles.

Make the sauce by melting the ¼ C butter in a sauce pan and adding the ¼ C flour, mix thoroughly then slowly add the 2 C milk and stir until thick and bubbly. Mix in the ¼ C Shredded Parmesan cheese.

Pour the sauce evenly over the remaining top three lasagna noodles and sprinkle with the remaining ¼ C shredded Parmesan cheese.

Bake for 1 hour or until lightly brown and bubbly. Enjoy!
